3 яйця або 4 жовтки

80г підтопленого вершкового масла або маргарину

1 пачка желе зі смаком ківі (можна 2 пачки желе, тоді крохмаль не додавати до яблук)

3 eggs or 4 yolks
100g sugar
100ml milk
3 tbsp ground poppy seeds
50ml oil
30g cocoa
170g flour
10g baking powder
🌟Apple cake
Dough
250g flour
1 tsp baking powder
80g melted butter or margarine
2 egg yolks
2 tbsp sour cream
60g sugar
1 pack of kiwi-flavored jelly (you can use 2 packs of jelly, then do not add starch to the apples)
1kg peeled apples
3 tbsp corn starch
30-50g sugar depending on the variety of apples
🌟Nut meringue
4-8 egg whites
150g sugar
3 tbsp cornstarch
200g nuts
☕️CREAM
2 egg yolks
3 tbsp. sugar
2 tbsp. flour
40g cornstarch
1 tbsp. instant coffee
3 tbsp. ground poppy seeds
500ml milk
200 ml condensed milk
200g butter
Chocolate & Apple Layer Cake
🤎1. Chocolate Sponge Layer
☆Ingredients: 3 whole eggs (or 4 yolks), 100g sugar, 50ml oil, 100ml hot boiled milk, 3 tbsp ground poppy seeds, 170g flour, 30g cocoa powder, 10g baking powder.
☆ Preparation:
Beat the eggs (or yolks) with sugar until fluffy. Add the oil.
Separately, mix the hot milk with the poppy seeds.
Mix the dry ingredients: flour, cocoa, and baking powder.
Sift half of the dry mixture into the eggs, stir, add the poppy seed mixture, then add the remaining dry ingredients.
Pour the batter into a 20x25 cm mold.
Bake at 170°C for approximately 25–30 minutes.
🤎2. Walnut Meringue Layer
☆Ingredients: Remaining egg whites, 150g sugar, 3 tbsp cornstarch, 200g walnuts (plus extra for topping).
☆Preparation:
Whip the egg whites with sugar until stiff peaks form.
Fold in the cornstarch, then gently mix in the walnuts.
Spread the mixture into the mold and sprinkle with extra walnuts.
Dry in the oven for about 1.5 hours at 100°C. (Use convection mode if using an electric oven).
🤎3. Apple Layer
☆ Dough: 250g flour, 1 tsp baking powder, 2 yolks, 60g sugar, 80g butter (or margarine), 2 tbsp sour cream.
☆Filling: 1kg peeled sour apples (grated), 3 tbsp cornstarch, 30–50g sugar, 1 pack green jelly powder (or 2 packs if omitting starch for a brighter color).
☆ Preparation:
Mix flour and baking powder. Separately, mix yolks with sugar, then combine with butter and sour cream. Mix everything with the flour to form a dough.
Divide the dough into two parts and place them in the freezer.
Grate the first half of the frozen dough into the mold and spread evenly.
Mix the grated apples with starch, sugar, and jelly powder. Spread over the dough.
Grate the second half of the dough over the apples and top with walnuts.
Bake at 180°C for about 50 minutes until golden. Let it cool completely in the mold.
🤎4. Coffee-Poppy Seed Custard Cream
☆Ingredients: 2 yolks, 3 tbsp sugar, 40g cornstarch, 2 tbsp flour, 100ml cold milk, 1 tbsp instant coffee, 3 tbsp ground poppy seeds + additional milk for boiling (approx. 300-400ml).
☆ Butter Base: 200g butter (room temperature), 200ml condensed milk.
☆Preparation:
Mix yolks, sugar, starch, flour, 100ml cold milk, coffee, and poppy seeds.
Boil the remaining milk, then slowly whisk in the yolk mixture. Cook until thickened (pudding consistency), stirring constantly.
Cover with plastic wrap (touching the surface) and let it cool to room temperature.
Beat the butter, add condensed milk, and beat again. Gradually add the cooled pudding, whisking until smooth.
🤎Assembly
☆ Prepare the Base: Trim the edges of the chocolate sponge. Mix the crumbs with half of the cream.
☆ First Layer: Spread the crumb-cream mixture over the cooled Apple Layer (while it's still in the mold).
☆Second Layer: Place the Chocolate Sponge on top.
☆The Flip: Cover with parchment and a cutting board, then carefully flip the cake over. Remove the parchment from what is now the top (the apple side). Note: Ensure the apple layer is cold and set before doing this.
☆Final Layers: Spread the remaining cream and top with the Walnut Meringue.
